Vent high, and vent less than you think

Steam rises and condenses on the coldest surface, which is the underside of the lid. Vents high in the side walls let it leave before that happens; vents in the lid dump heat and still allow condensation to form on the way out.

Two or three small vents per side is the working balance. A waffle is not a large thermal mass, so over-venting cools it faster than it dries it, and a cold crisp waffle is not much better than a warm soft one.

A waffle with cold toppings — ice cream, cream — is the opposite case. Less venting, and get it to the customer faster.

Measure the tallest thing you serve, not the average. A box sized for a plain waffle will crush the loaded one, and the loaded one is the photograph on your menu.

Windows on something that steams

A window sells a loaded waffle better than any photograph, and a filmed window on a hot steaming product fogs almost immediately — which hides the exact thing the window was bought to show.

An open die-cut window works, doubles as a vent, and is cheaper. It is one of the few places where the cheaper option is also the better one, the same conclusion as our bakery box window notes.
